Flat Bottom Check: The 30-Second Pan Test
Set the pan on a flat countertop, spin it slowly, and watch for wobble or light gaps at the base. Lay a straightedge across the bottom: if you see daylight underneath, the pan is warped. A pan that fails this 30 second test will never heat evenly, no matter what it's made of.
Most people skip this. They unbox a new pan, rinse it, and put it straight on the burner. But a warped base is one of the most common reasons a pan that looked fine in the store cooks unevenly at home, and checking for it takes less time than reading this paragraph.

Why a Flat Bottom Is the Whole Point
Heat moves into a pan through direct contact with the burner or induction coil. Where the metal touches the heat source, it gets hot fast. Where it doesn't, it lags behind. A warped bottom creates exactly that situation: high spots that scorch and low spots that barely warm up. - Spin it. Give it a gentle push. A flat bottom stays put or spins smoothly in place. A warped one rocks or skitters.
- Press the rim. Push down on opposite sides of the rim, one at a time. If one side dips while the other lifts, the base is bowed.
- Look for light. Get low and check the seam where the pan meets the counter. Any visible gap around the edge means the center or rim isn't making full contact.

If the countertop test is inconclusive, two backup checks settle it. Hold a metal ruler or straightedge flush against the bottom and look for gaps between the edge and the pan. Even a hairline gap under strong light means the surface isn't true.
Or run the water test on the actual stove: add a thin layer of water, turn the burner to medium, and watch how it moves. Water should spread and simmer evenly across the whole base.
