Is nonstick cookware safe? The acronyms, in plain language

PTFE stands for polytetrafluoroethylene. It is the polymer most people know by the trade name Teflon. It is what makes a nonstick pan slippery. PTFE is a member of a broader family of synthetic chemicals called PFAS.

PFAS stands for per- and polyfluoroalkyl substances. There are thousands of them. They share a carbon-fluorine bond that does not break down easily in the environment or the human body, which is why the EPA describes them as forever chemicals.

PFOA stands for perfluorooctanoic acid. It was historically used in the manufacturing process for PTFE coatings. It is the chemical that drove most of the lawsuits, regulatory action, and public concern around nonstick cookware in the 2000s. It was phased out of US PTFE production by 2015.

PFOS and GenX are other specific PFAS compounds in the same broader family. PFOS was used in older formulations of stain repellents and firefighting foam. GenX is one of several replacement chemicals introduced after PFOA was phased out.

The category as a whole is what people now mean when they say forever chemicals. PTFE is technically a PFAS. PFOA is a different PFAS. A pan can be labeled PFOA-free and still have a coating made of PTFE, which is still a PFAS. That distinction is where most of the confusion lives.

What the FDA and EPA actually say

Two questions matter for a cookware buyer. First, what is in the pan? Second, does any of it end up in the food?

On the first question: any pan labeled nonstick uses some kind of chemical coating. Most are PTFE-based. Some are ceramic sol-gel based, which avoid PTFE but use their own chemistry. Either way, the cooking surface is a layer of chemistry applied to a metal base.

On the second question, the evidence-led answer is genuinely nuanced. Intact PTFE used at normal cooking temperatures is considered stable by the FDA. The concern lives in two specific scenarios.

Scenario one: overheating. PTFE begins to degrade and release fumes at sustained temperatures above roughly 500 degrees Fahrenheit. Empty pans on high heat reach that point quickly. Those fumes are known to be toxic to birds at low concentrations and can cause flu-like symptoms in humans, a condition occasionally called polymer fume fever.

Scenario two: physical wear. When a coating scratches, flakes, or chips, fragments end up somewhere. PTFE itself is not absorbed efficiently by the digestive system if ingested, but the family of PFAS compounds it belongs to is increasingly found in human blood samples worldwide. The exact contribution of cookware to that total exposure is an active area of research, not a settled question.

The honest summary is that a brand new, intact, never-overheated PTFE pan is probably fine for most people. The realistic state of most home pans, scratched after a year of metal utensils, occasionally cranked to high heat, used past the point where the coating is visibly worn, is the part of the question worth thinking about.

Is ceramic cookware safer than nonstick?

Ceramic-coated pans skip PTFE but bring their own chemistry. The coatings are silica-based sol-gel formulas that often include other binders and pigments. Independent testing has found a range of compounds in various ceramic coatings, and the long-term wear behavior is generally worse than PTFE, with the surface losing nonstick performance inside the first year for many users.

The rational move

If a coating exists, two things are true. It is sitting between your food and the metal of the pan. And it will eventually wear, scratch, chip, or degrade, because that is what coatings do.
