Stove Dial Numbers Explained: Simmer, Saute, Sear
Stove dial numbers (1 through 10, or Low through High) don't measure a fixed temperature. They measure how much heat your burner puts out relative to its own maximum, so a 6 on a gas range, an electric coil, and an induction cooktop can produce three different actual temperatures on the pan.
That's why a recipe that says "medium heat" can leave one cook with a gentle simmer and another with a hard boil. The numbers are relative, not absolute, and they change again depending on the pan you're using. Once you understand what each zone of the dial is actually asking your burner to do, and how your cookware responds to it, simmering, sauteing, and searing stop being guesswork.

Why "Medium" Means Something Different on Every Stove
Manufacturers don't publish a BTU or wattage output for each dial position, and there's no regulation forcing them to. A gas burner's "5" might be 6,000 BTU on one range and 9,000 BTU on another. An electric coil's "5" ramps up on a delay, then overshoots before settling. Induction skips the delay almost entirely, since it heats the pan itself through a magnetic field rather than heating air or a coil first.
This is also why the same recipe can behave differently in two kitchens. The dial number was never the instruction. The result, a slow bubble, a steady sizzle, a shimmer, is the instruction. The number is just how you get back to it next time.
What Each Zone of the Dial Is Actually Asking For
Once you stop treating 1 through 10 as a temperature scale and start treating it as three functional zones, cooking gets a lot more predictable:
- Low (roughly 1 to 3): This is simmer territory. You're looking for small, lazy bubbles that barely break the surface, the setting for sauces, stocks, and anything that needs to reduce slowly without scorching.
- Medium (roughly 4 to 6): This is where most sauteing happens. Oil should ripple slightly and food should sizzle steadily the moment it hits the pan, without smoking or spitting.
- High (roughly 7 to 10): This is sear territory, the zone for getting a hard, fast crust on a steak or browning vegetables in minutes instead of ten. Oil is just short of smoking, and the pan needs to have come up to temperature before food goes in.
Have everything prepped before you touch the high end of the dial. A sear moves fast, and there's no time to chop while the pan waits. Gas, Electric, and Induction Change the Math
The dial is only half the equation. The heat source changes how quickly that number translates into pan temperature.
Gas gives you instant, visible feedback, the flame height tells you roughly what you're getting, and it responds the moment you turn the dial. Electric coils lag behind the dial by 20 to 30 seconds and hold onto heat after you turn it down, which is why so many people scorch sauces on electric ranges. Induction reacts almost instantly like gas, but only works with magnetic cookware, and a given number tends to run hotter than the same number on gas because there's no heat lost to the air around the pan.

Your Cookware Sets a Ceiling the Dial Can't Ignore
The pan you're using changes what a given dial number actually does to your food, and it changes what's safe to do at that setting.
Coated nonstick pans have a real heat ceiling. Most manufacturers cap safe use well below what a "High" dial setting can produce, because pushing a coated surface past its rated temperature is what causes it to break down, which is also usually when you start seeing the surface bubble, discolor, or flake and peel. A Five-Minute Way to Learn Your Own Stove's Real Numbers
Forget the dial markings for a minute and calibrate against water and oil instead, both behave the same way regardless of what stove you own.
- Find your simmer. Bring water to a boil, then lower the dial until you see small bubbles rising steadily but the surface isn't rolling. Note the number. That's your simmer setting for that pan.
- Find your saute zone. Add a thin layer of oil to a dry pan and raise the dial slowly. The moment the oil starts to shimmer and move like water, note the number. That's your saute starting point.
- Find your sear ceiling. Keep raising the dial until the oil is just about to smoke, not smoking, just at the edge. That's the top of your sear range on that burner.
Write the three numbers down for each burner you use most. Stoves don't heat evenly across every burner, so the front-left and back-right can genuinely need different settings for the same result.
After the Heat: Caring for Your Pan Matters Too
A pan that's just come off a hard sear is thermally stressed, and how you cool and clean it affects how it performs next time. Plunging a screaming-hot pan into cold water can warp thinner metals, and tossing it straight into a dishwasher's hot, high-pressure cycle isn't much gentler. FAQ
Is medium heat always the same as a "5" on the dial?
Not necessarily. "Medium" refers to a functional zone, roughly the middle third of your dial, where oil ripples and food sizzles steadily without smoking. On some stoves that lands closer to a 4, on others closer to a 6. Test with oil rather than trusting the number itself.
Why does my pan smoke at a lower setting than my old one?
Different materials heat and hold temperature differently. A pan that heats faster or retains heat more evenly can hit oil's smoke point at a lower dial number than a thinner or less consistent pan did. This is normal and just means your calibration numbers need to be reset for the new pan.
Can I sear on an electric coil the same way I would on gas?
Yes, but expect a longer preheat and slower response to changes. Electric coils take longer to reach searing temperature and hold onto heat after you lower the dial, so pull the pan slightly before you think you need to. Give it two to three extra minutes of preheat before adding food.
Does induction really run hotter at the same dial number?
Often, yes. Induction heats the pan directly through a magnetic field instead of warming the air around it first, so less energy is lost and the same numbered setting can produce noticeably more heat than gas or electric. Start one or two numbers lower than you're used to and adjust from there.
