1. Scrub the bare pan with hot water, dish soap, and a stiff sponge or steel wool. This is the one time soap is allowed. Dry it completely and immediately, including the rivets, since leftover moisture starts rust within minutes.

5. Repeat steps 3 and 4 three to four more times, deepening the color from steel-gray toward black.
6. Cook something fatty for your first few meals, like bacon or a fried egg, to build the patina through real use.

By the end you should have an even, dark surface with no shiny raw spots left.
